Watch as our executive butcher Dave Meli takes you from hanging beef to a great cut. In this episode, we're showing you "Mock Tender". This delicious roast is ideal for braising. (slow cooking at a low temperature). Mock Tender is a lean and delicious cut. It isn't tender in the usual sense in that it shouldn't be used for grilling but as a pot roast it is a nice cut and is tender when slow braised. Because we are a "whole animal" butchery, this cut is available to our customers. In this video, Dave is working with a 100% grassfed beef.
